The yellow fleshed Kipfler has a lower GI than many other potato varieties. Plus it's packed with fibre, some protein, Vitamin C, B6 and several essential minerals. All of which make it an excellent base for a healthy salad! We also add cabbage, celery and carrot to up the ante, and top with beautifully toasty, crunchy corn. The salsa verde dressing contains a stack of fresh green herbs with vinegar and olive oil for tangy flavour.
