Eggplant parmigiana w quinoa
VegetarianThis classic Italian vegetarian dish is composed of roasted eggplant with a house-made sauce of garlic, basil and tomato, with the addition of chunks of capsicum and zucchini. And it's not parmigiana sauce without cheese, so we added a small amount of parmesan on a bed of deliciously seasoned quinoa.
